I needed a quick snack between work and my dancing lesson because I was off to a meeting straight after dancing… But what? Quick and not too heavy, minimum cooking required? Something with avocados…? Guacamole…?
Wraps are fresh and easy. I got some ready-to-use crayfish from the shop as well as whole wheat tortillas, fresh coriander and pineapple-tomato salsa.
Heat up a couple of tortillas in the oven, wrapped in tin foil. Or if, unlike me, you have a microwave, just nuke them. Meanwhile prepare your crayfish filling and your guacamole.
- Some crayfish in brine
- 3 mini plum tomatoes, quartered
- half of a small onion, finely chopped
- a bit of yellow bell pepper, chopped
- lemon juice
- fresh coriander, chopped
Wash and strain you crayfish. Place them in a bowl with everything else you’ve prepared and mix. And there you have it.
- 2 small, ripe avocados
- half of a small onion
- 1 small clove of garlic
- a bit of red chilli, chopped
- fresh coriander
- lemon juice
Pop it all in a suitable receptacle and puree with a handheld mixer.
Take a warm tortilla, a couple of dollops of your guacamole spread on it, crayfish filling on top and a bit of store-bought salsa on top. Yummy. Nothing else needed. Quick and easy. So quick in fact, that I managed to blog about the wrap as well as eat it before heading off to dance class!
